Description
Imarti is a traditional North Indian sweet, often compared to Jalebi but thicker and more intricate in design. It is made using a batter of soaked and ground urad dal (black gram), which is piped into hot oil or ghee in circular, flower-like patterns.
Once fried until crisp on the outside, the imarti is immediately soaked in fragrant sugar syrup flavored with cardamom, saffron, or rose water. This process gives it a juicy interior while maintaining a slightly crisp outer layer.
Imarti is typically bright orange or golden in color and has a rich, slightly tangy sweetness due to the lentil base. It is often enjoyed during festivals, weddings, and special occasions, and pairs well with rabri or milk.
